Crispy Prawn Fritters 凤尾虾


Crispy Prawn Fritters 凤尾虾
.Marinate prawns with some salt, rest in fridge
.Prepare Batter
1 cup self-raising flour
1 tsp baking soda
2 Tbsp Rice Flour
2 tsp chicken stock powder
1/2 tsp salt
Pepper to taste
Add in water to form thick batter
Let it rest in fridge for 30min to 1 hour
. Heat up oil, coat prawn fully with the batter, dip inside heated oil, when prawn is cooked, it will floated on the surface of oil.
. Ready to serve

醉鸡卷

1. 去骨鸡腿 1只
.在内部稍切,将鸡腿卷起,鸡皮在外。
.用钖纸包卷,2 edges need to wrap properly.
2.调料
. 酸梅 1粒
. 当归 3片
. 枸杞 1Tbsp
. Soy sauce 1 tsp
. 绍兴酒 100 ml
混合在一起,浸泡在酒中
3. 将水煮开,放入锡纸包好的鸡腿,熟20min, 焖10min..
4.凖備可以饮食的冰水,将焖好的鸡腿冰镇10min
5. 将调味倒入塑料袋,打开锡纸,将鸡卷也放入塑料袋,将袋口密封好,收入冰房一天。
6.搁天取出切片,可上餐。

面缐鸡汤

面缐鸡汤
4 litre, 20~24 pcs of chicken.
8 whole pcs of chicken wing, cut in 2 pcs
6 pcs of chicken tights
Every 500 litre of water :
0.5 tsp salt + 0.5 tsp chicken stock powder (or 1 tsp Salt)
1 dash of pepper
2 pcs if rock sugar
Noxxa Multifunction Cooker
LP 60min
After cook, add 0.5 tsp soy sauce
Soy sauce to taste after cook
用Noxxa高压锅烹饪
面缐鸡汤
4升水
鸡肉20件
10整个鸡翅,切成2个
每500公升水:
0.5茶匙盐+ 0.5茶匙鸡汤粉
1胡椒粉
冰糖2件
Noxxa多功能电磁炉
LP 60分钟t

  • 0.5 tsp 酱油煮后调味

发财发糕发发发!Prosperity Cake

发财发糕发发发!
This is another very popular traditional cake for Chinese households. It symbolizes prosperity.
It just need 20 min baking time.
(recipe in English is also attached after the Chinese version)

Noxxa Smart Cooker @ Steam 20分钟
食谱:
发财发糕
材料:
自发麵粉139g
双性发粉 1/4茶匙
鸡蛋半粒
细糖 80g
水100ml
油 22g
颜色:pandan葉汁或食用红色素

做法:
1.用两层的竹架,加入鍋内.
2.加入1.5lit的水
3.选择蒸功能2分钟,将水煮沸
4.除了发粉,将所有材料用义调匀
5.在将材料将入锅前,才加入双性发粉,调均匀
6.鍋要在关电源,放气、才能并鍋蓋。
7.将纸杯放入蒸模,将材料放入纸杯
8.按蒸功能20分钟,鎖紧鍋蓋,鍋蓋点对点调到蒸的位置,蒸熟.







Prosperity Cake
(The portion is for 4 cups)
Materials:

Self raising flour , 130g
Double Action Baking Powder 1/4 tsp
O.5 egg 
80g sugar
Edible Coloring or Pandan Juice
Water 100ml for 4
Oil 22 g

Steps: 
1. Using bamboo steam racks, double stack, put inside Noxxa inner pot, add 1.5 liter of water.
2. Select steam option, bringing water to boil for 2 minutes.
3. Besides Baking Powder, putting all other ingredients, Oil, Egg, water, sugar, flour and coloring inside a mixing bowl, mix well. Add baking powder just before baking, mix well.
4. Put the paper cups inside the metal mould to hold the shape. Pour the batter upto 90% filled
5. For the boiling water, off power, release pressure, open the lid.
6. Place the container filled with batter on the rack.
7. Set Steam option to 20 minutes.
8. Prosperity cakes are ready to serve.

JW 年糕Noxxa HP45min

For welcoming Chinese New Year, this traditional chinese new year cake is a must for every household. Last time it takes about 5 to 6 hours for the whole process, and now with Noxxa Smart Pressure Cooker, the process just takes 45 minutes.

年糕Recipe 
材料:
. 400g 糯米粉
. 250g 白糖
. 100g 椰糖gula melaka /gula nipah
. 620g 热滚水
(份量大约三个10cm模型份)
方法:
1.将白糖和椰糖用小火煮到白糖稍微呈褐色时,慢慢加入热滚水,煮至所有的糖溶解在水中。糖水待冷备用。
2.用Noxxa Steam (蒸)的功能以10分钟将香蕉葉蒸软,铺好模型,待用。
3.将糯米粉入在糕点容器,慢慢加入冷却的糖水,搅拌到无粉粒,然后过滤。
4.用小火将面糊煑至稍微浓稠。
5.倒入模型。
6.在Noxxa Smart Pressure Cooker 加入400ml 水,放进装有面糊的模型,以High Pressure (高庒)功能,45分钟炖熟。
7.待冷,脱模。

Chinese Meat Spring Roll (春卷)


Chinese Meat Spring Roll (春卷)is one of the very popular home cooked dishes prepared for celebrating occasions like Chinese New Year or the village Wedding events, etc. This is a 'must-have' dinner selection serves at my family Chinese New Year Eve. 



Pork is commonly used for the fillings. For this recipe, I have replaced pork with chicken breast meat, so that Malaysia's Muslim friends can also enjoy this recipe.

Also, I personally do not enjoy the strong seasoning flavor of Chinese Five-Spice Powder and just use pepper, chicken stock and sugar. You can go for  seasoning variations based on your taste bud preference.

Chinese Chicken Spring Roll 雞肉春卷

Ingredients :

A: fillings
Chicken Breast 250g, cut to stripes. (or a Soup Bowl)
Onion, 1 piece, finely chopped
Garlic 1 glove,  finely chopped
Carrot 1/2 piece, finely chopped
Egg 1 piece

B: Bean Curb Skin Wrap

C: Seasoning -
Pepper a dash

Oyster sauce, 2 tsp Chicken stock, 1 tsp
Five Spice session 1/3 tsp
Corn flour. 1 tablespoon


Method- How to cook Chicken Meat Spring Roll

1. Chicken breast can be cut to stripes minced . I prefer stripes as the it is giving a better chewable texture. Placing in the mixing bowl
2. Add all seasoning, mix well, set for about half an hour.
3. Add egg and corn flour before wrap
4. Cut Bean Curb skin wrap into piece size of approx 10cm x 14cm,


5. Wrap the fillings into the shape of cylinder


If Using Wok for cookinga. Heat oil in the non-stick pan
b. Place the Spring Rolls into the heat oil, ensure both side of the spring roll are cooked when the spring rolls turn golden brown. Remove spring rolls from the pan, drain off excess oil, leave to cool,
c. Cut into bite-able size,  Ready to serve.

If Using Air Flyer
a. 200C , 12 to 13min
b. Leave to cool, cut into biteable size. Ready to serve. Have fun in your kitchen!

JW Chinese New Year Recipe : Pickled Radish and Ginger with Century Egg


Pickled Radish and Ginger with Century Egg is a favorite Chinese New Year (CNY) Recipe serve on New Year Eve.
My mum said she was taught by her mum, and now I am learning from her. It is an apertizer as well as can be served as one of the main course. It can be served as Vegetarian dish by not serving with Century Egg.
It consists of 5 ingredients : Carrot, Radish, Ginger, Red Chilli and Green Chilli.
and Century Eggs

skin Carrot, Raddish and Ginger
Cut into thin slices

 Cut both red and Green Chillis into halves,
Remove seeds
Cut to shred

Pour half a bowl of salt into the mixing tray which
contain slices of Carrot, Radish and Ginger
Rub salt with slices till slices soften in texture
Rinse off with running water

Add Sugar and Vinegar to the Vegetable, stir well, add Chillis, soak for about 30 minutes,
ready to serve

This dish can be keep for a week if store at the fridge
