滑溜溜的水蒸蛋

Super Smooth Steames Water Eggs
滑溜溜的水蒸蛋


材料
3粒A-Size 鸡蛋
凉滚水(比例约1分蛋:2分水)
少许盐或鸡精粉

准备工作
1. 在碗中打入鳮蛋,秤好打散鸡蛋的准确重量.
2.把打散鸡蛋1.9倍重量的冷滚水倒入大碗中,加入鳮精粉或盐拌匀。

做法:
1.蒸碗放入蒸笼中加温。
2.鸡蛋倒入大碗中,和放凉滚水一起拌匀。
3.把拌匀液体筛入另一个碗,以移除泡沫。重复这个步骤以移除更多泡沬。
4.把过筛液体倒入蒸碗,盖上盖子,用大火蒸约4分钟。
5.熄火后,保留盖子并继续放在蒸笼中约5分钟,取出。

6.淋上少许醤油和麻油,撒上靑葱花,搭配白饭享用。

提示
测量的重量一定要准确,秤好打散鸡蛋后,把重量乘以1.9即是蒸蛋所需的份量。(例如:若打散的鳮蛋重量是200克,那么需约380克清水)
