Let's try out this Deliciously Healthy Brown Rice Salad – Nasi Ulam Recipe.
Nasi Ulam is one of my favorite local recipe, it's delicious and a lot of naturally green which make it fibre rich that helps digestion, improve constipation.
Nasi Ulam,
also known as Nasi Kerabu, is a Malaysian local healthy tasty food, combination
of rice and fresh, natural and raw herbs and vegetables. This dish is a feature of Malay cuisine with many variations.
I like to substitute the white rice with
brown rice, which add nutritional value to the recipe. This recipe can also be a
great vegetarian recipe with the right choices of ingredients.
Fresh aromatic herbs and vegetables
commonly used are lemon grass, kaffir lime leaves, ginger, fresh turmeric, turmeric
leaves, curry leaves, shallots, onion, long beans, cucumber, pucuk gajus
(cashew leaf shoots), Sometimes, Kerisik (roasted coconut, pounded) and shredded
fried salted fish, or fried fish, fired dried prawns can also be added..
For the reason of health
and simplification, I personally don't like to add oil, kerisik and salted fish
to this recipe. It could be the Zero Oil Recipe if leave out dried salted fish and prawns.
Healthy Brown Rice Salad Nasi Ulam Recipe 1, is as follows :
Ingredients for Brown Rice Salad Recipe 1:
A. Cool Steamed / cooked brown rice, 300g
Cook Brown Rice by using slow cook double-boiled,
with rice to water portion of 1:1.2 or 1:1.5.
or pre=soaked the brown rice for 20 minutes, and
cook rice with rick cooker.
B. Fresh Ulam and ingridients for mixing :
1. Duan Kaduk 100g,Wild Pepper Leaves, shredded
2.Wild Ginger Flower (bunga Kantan),
thinly sliced,
3.10 Shallot, thinly sliced,
4.Kaffir Lime Leaves
5.Serai, 1 stalk, thinly sliced
6.Lime Juice 4 tablespoon
7.Sugar 3 tablespoon
8.Roasted ground nut, 3 tablespoon
9.Fresh Ginger, 2 cm, minced finely

C. Fried Shallot
for garnishing
Method: How to prepare for the Malay Brown Rice Salad
1. Cook the rice first, leave it cool
2.Clean all herbs and vegetables thinly slice.
3. Optionally, you can add dried salted fish and dried prawns,
roasted or fried, and pounded.
4. Combine the Sambal Belacan with shallots and
lime juice in a large bowl,
5. Add all fresh ingredients (B), mixed well ,
6. Add steamed brown rice, toss well until
thoroughly mixed.
7.Add fried to garnish, ready to serve.
Other variations is to leave out shallots, dried salted fish and dried prawns to make the Vegetarian Brown Rice Salad :-
Also, it's great to add other greens like long beans, various local salad leaves, and adding fresh tumeric which is an excellent anti-oxidant ingredient :
